Caesar Salad the only way if should ever be made

I am putting a nix on all bottled Caesar salad dressings. It is easy to make and much healthier for you than the crap you buy plus it tastes 100% better.



You first finely chop or put in the food processor, 2-3 cloves of garlic and about 1/4 of extra virgin olive oil. Let that sit at least 30 minutes. After add the juice of a quart of a lemon, 1/4 cup of fresh grated parm, and just a 1/4 tsp of anchovy paste, and one egg. Salt and Pepper to taste. Blend together.




For your lettuce use Romain and never use the middle crunchy parts as it is very tart and will change the taste of the dressing. rip the lettuce (after it is cleaned) into small pieces, set aside to dry.




Croutons you can use the store brands, or just grab a baguette and broil until brown and rub with Garlic. After cut into squares. (but make yummy Garlic bread as well)




I like to add both chopped bacon and chopped anchovies. They give it a nice flavor.




Toss and enjoy!





If you would like to make it a meal add grilled chicken or shrimp.




Also great with a glass of Cabernet Sauvignon.

  1. Don't put too much garlic or it will become spicy! But otherwise a delish dish
